Here at the PWWB House, we’re obsessed with light and fresh Mediterranean flavors. After all, who can resist the vibrant herbs, zesty citrus, and warm spices that make staples like Crispy Chickpea Falafel Balls and Turkey Falafel Meatballs so crave-worthy?

But when I enjoy these fresh, veggie-packed dishes, I often crave a creamy sauce to go with them—and this Green Tahini Sauce is the perfect pairing! It adds boost of color and flavor to any dish. 🌿✨

Ready in 10 minutes or less, this herby Green Tahini Sauce (or dressing!) is the ultimate all-purpose flavor booster for pita sandwiches, falafel bowls, fresh salads, and more!

Better yet, making a batch of green tahini couldn’t be easier. This no-cook sauce comes together in a matter of minutes—just toss everything into a food processor and let it work its magic, blending tahini paste with fresh herbs and lemon juice.

Keep it thick and creamy for a delicious dip for pita chips and fresh veggies, or thin it out with a splash of water for a drizzly tahini dressing perfect for salads and grain bowls.

This easy, no-cook recipe comes together with just 5 simple ingredients: tahini paste, lemon, garlic, ice water, and your favorite leafy fresh herbs.

Similar to nut butter, tahini is a rich, creamy paste made from finely ground toasted sesame seeds. Plus, it’s naturally vegan and tree nut-free—a great allergy-friendly staple!

For the best green tahini sauce, use good-quality tahini. Choose an earthy, nutty tahini with a smooth, drizzly consistency—no clumps or bitterness. My personal favorite is Soom, which is woman-owned, super high-quality, and easy to order online. Trader Joe’s also has a great affordable and organic option.

How to Make Green Tahini Sauce

Aside from its light and bright flavor, my favorite thing about this green tahini sauce is how quick and easy it is to make. It comes together in a your food processor in 10 minutes or less. If you’ve made my Lemon Tahini Sauce before, this process will look pretty familiar!

Add tahini, lemon juice, garlic, leafy fresh herbs, and salt to your food processor, then pulse until smooth.

Adjust as desired! Pulse in ice-cold water until the tahini sauce reaches your perfect consistency—leave it thick and creamy for a dip, or make it extra light and drizzly for a dressing.

No food processor? No problem! ⇢ You can whip this tahini sauce up just as easily in a blender—just use a tamper to help feed the fresh ingredients into the blade.

Ingredients

Scale
  • ½ cup runny tahini (see Recipe Notes, below)
  • 2 lemons, juiced (46 tablespoons lemon juice)
  • 2 cloves garlic
  • 1 ½ cups packed fresh leafy herbs of choice (e.g. parsley, cilantro, basil, chives, mint – see Recipe Notes)
  • heaping ½ teaspoon kosher salt
  • ½ cup ice cold water


Instructions

  1. Blend the green tahini sauce: To the bowl of a food processor, add the tahini, lemon juice, garlic, fresh herbs, and salt. Pulse to combine well, then run the food processor until the mixture is smooth and creamy, stopping to scrape down the sides as needed. Thin the mixture out with water, just until your desired consistency is reached—for a thick green tahini sauce, start with 4-6 tablespoons ice water and for a drizzly green tahini dressing, 6-8 tablespoons ice water is great.   2. Serve immediately. As a green tahini dip, it’s a great pairing for a veggie platter or mezze board. As a green tahini dressing, I love it drizzled over a roasted cauliflower bowl or a classic falafel salad or a chickpea burger (these turkey falafel meatballs are so fun too!). Notes

Jess’ Tips and Tricks:

  • Tahini is a paste made from sesame seeds, similar in texture to nut butters. You can find tahini in most conventional grocery stores, in the “international” aisle. My preferred brand is Soom—woman-owned, super high-quality, and very easy to order online. Trader Joe’s also has a fantastic and affordable organic tahini.
  • Herbs: You can use any combination of your favorite fresh leafy herbs for this green tahini sauce recipe. I typically use equal parts parsley and cilantro, but basil, chives, dill, and mint are also delicious. You really can’t go wrong, so have fun with it and play around to find your favorite combination.

Make-Ahead and Storage:

  • Storage Instructions: This green tahini sauce (or dressing!) will keep, stored in an airtight container or jar in the refrigerator, for up to 1 week. It may thicken naturally as it sits, simply stir in a splash of water or two before serving to loosen it up to your desired consistency.
